2 Cup of flour
1 tsp. of salt
2 tsp. of baking soda
2 tbsp. of sugar
2 cups of buttermilk
6 tbsp of melted, unsalted butter
1 1/2 tsp of vanilla extract
In a medium bowl, mix all dry ingredients together with a whisk. Be sure the mixture is thoroughly blended and mixed.
In a larger bowl, mix all wet ingredients together. Stir briskly until the mixture is smooth and blended.
Stir the dry mixture into the wet mixture only until the dry mixture is moistened. Leave the lumps. Let the batter stand for a few minutes so the baking soda activates a little.
Heat a skillet or griddle to medium hot. Lightly grease if needed.
Spoon out the batter using a 1/3 cup measuring cup.
Cook until a few bubbles break on top.
Turn the pancake over and cook briefly.
You may add fresh or frozen fruit to the pancakes as you spoon them onto the griddle.
